A winter ritual in Gujarati homes

When the first chill arrives, many Gujarati kitchens begin making vasanu — rich, spiced sweets prepared in a big batch and eaten a little each morning through the cold months. Masala Pak is one of the most loved. It is traditionally eaten in winter for warmth and energy, usually a small piece with a glass of hot milk before the day begins.

What goes into ours

Every batch is slow-roasted by hand in our Jamnagar kitchen:

  • Whole wheat flour roasted in pure ghee until it smells nutty and turns golden.
  • Gond (edible gum) fried until it puffs up, then crushed.
  • Dry ginger (sonth) and ganthoda (pipramul) — the warm, peppery heart of every masala pak.
  • Nutmeg, cardamom and a little black pepper.
  • Almonds, cashews, dry coconut and kharek (dried dates) for body and bite.
  • Jaggery, melted in at the end, for a deep, earthy sweetness.

How to enjoy it

A small piece in the morning with warm milk is the traditional way. Masala Pak is quite rich and spiced, so a little goes a long way. It is a thoughtful gift for parents and grandparents as winter sets in.
